The actual term is polynomial interpolation. And for that matter, binomial interpolation is the same thing as linear interpolation.

The binomial expansion is massively useful everywhere. Have you heard of Pascal's triangle? Write this:

1 1
1 2 1
1 3 3 1
1 4 6 4 1
Each number is the sum of the two that are directly above it. If you read across a row in the triangle, it's the coefficients in the binomial expansion.
The bottom row will give you (x+y)^4.
